A USA dollar remains the currency of choice around the world.
I will go for US dollars Traveler Cheques.
There are some places in China that will not be too friendly to any other currency.
Your choices to use or exchange foreign currency, is greatly reduced on Saturday and Sunday, after the banks close for the day.
Except if, you have USA dollars.

Which one is your home currency? Take that one, assuming it's either GBP or USD.

Keep in mind that you may also be able to use your debit cards in both Mainland China and HK as well as credit in some places on the mainland and most definitely in HK. This as a lot more conveneint that travellers cheques if you are only visiting cities.

Bank of China allows international transactions from Debit Cards.
