Hoping someone here can help me!

6 years ago, I traveled through China and ate a dish in a few regions, I was told was made with "chicken knuckles".

As best as I could tell, it was made from the cartilage found between the wings and the drum sticks.

It came in many different sauces.


Any help???

GUEST05565 It may be "Ji Cui Gu" (chicken knuckles) cooked in different ways, but I cannot tell what the exact name is. Could you give me more clues?
