Maybe your bus will stop at Guan Yuan bus station in Guangzhou (GZ).  Where will you stay in GZ?  Only one day in GZ?  You will regret to stay in GZ for a day, not much to see.  GZ is a big city that has 12 districts.  From GZ take a train, either from Central or East station to HK and make a stop at Luohu (Lowu) Immigration (GZ-HK takes approx 2.5 hrs ), at Admiralty (HK) you can take metro train to the airport.
2) what's your budget?  How many persons will be with you?  In GZ you can stay at Jiamei Inn for less than 150RMB per night at Shangxia Jiu area.  It's a nice place, not far from Holiday Inn, and there's a pedestrian shopping area, just like in Beijing Lu.
