I would suggest that you spend more time around the cities in the area surrounding Shanghai -- there'e plenty of nice destinations in this region. Hangzhou, Nanjing, Yangzhou, Suzhou, the water villages, even Huangshan though you say you're more interested in urban rather than rural destinations!
You could do roughly the Shanghai -- Xi'an -- Beijing triangle, then the direct train Beijing -- Hong Kong.
When are you ending the trip? The 1st few days of May are the Labour Day holidays, strongly recommend that you already be in Hong Kong at that time.
