There are direct flights from HKIA to Shantou. The route is run by China Southern Airlines. It leaves at 11:15 and arrives in Shantou at 12:10.

From Shantou to Shenzhen, go to Shantou Central Bus Station to take long distance bus.

You can take Hong Kong MTR to Luohu. Pass the border to go to Shenzhen, then go to nearby Luohu bus station to take a bus to Shantou. The bus ride takes about 2 hours and rmb90.

There are many buses going this line. I'm not clear about the exact pick up points.
