I haven't been to Huashan but I doubt it's "easy" for a daytrip, especially considering the difficulty and amount of people. It seems that you're really not interested in walking/climbing. No offence but I would then advise you NOT to bother visiting any mountains in China. It's a waste of time and money (especially the latter).
For the "city stopover sight", I would recommend that you try Shanghai Museum which's in People's Square. There's left luggage service there for free IIRC, or you could also detour to the main train station to leave your luggage there. No lockers at either, but there's left-luggage service at both.
Yes, there're buses for Suzhou -- Hongqiao/Pudong airport. Hongqiao is closer. I think it takes about 2-3 hours depending on traffic conditions.
