I chose Shenzhen Pickle for the reason that a lot of people speak English better than most and you are 30 minutes from Hong Kong(amazing place), in Shenzhen, it is a well built city with good trade, but the great thing is it's not GOGOGO, like you would expect London for example, and the people are very friendly there.
I have friends dotted around China and from experience it will also depend on what you want to do and who you want to meet, as morales and traditions vary from province to province.
