I'll be visiting a friend in Dalian for two weeks
in October. Any suggestions on how much cash i
should take. Normally I'd use credit cards or an
ATM but have been told that they are not as
generally accepted, or available (ATM's) as in
the America's or Europe.

I suggest not take much cash, because ATMs usually accept credit cards, even if ATMs don't accept your credit cards, Bank of China will do for sure and the network of Bank of China are extensive. Don't worry.

You can use both Credit and Debit card in China at bank of China branches in most cities.

Only requirement of your Debit card is that it can be used overseas. Check with your bank if you prefer to use this.

All my visitors from home have been able to use thiers while here in China over the past year. Very convenient.

But you will need cash to pay for most things but you can just draw as you need it.
