The best fried rice uses rice that are cooked overnight. Freshly cooked rice are no good for frying. It is too soft and sticky. The dish actually evolved from family leftover rice and leftover dishes. Hehe... and now this dish is popular the whole world over.

溜鸡脯 （liu ji pu ) chicken breast with peas simmered in white sauce .It was said that this dish is Empress Dowager Cixi's most favourite one.
红烧肉(hong shao rou) braised pork with brown sauce ,this is one of the representative braising dishes of Xiang Cuisine .
