I haven't traveled by train from Hohhot to Beijing, but I have tried all kinds of trains in China, so, might be experienced enough to answer your question:-)

The overnight soft sleeper train is good, K90 21:12pm- 07:22 am+, the trainfare is about 250rmb.There are other options, but K90 is the best of all. But you will have to share one compartment with another three people, that may concern you a bit if you care about the privacy and space a lot;-)

But, i think taking flight is better, it takes less than one hour at 500rmb (the listed price), if you are lucky enough to get some discount on flight, it's just slightly more expensive than trainfare but save plenty of time.
