Shenzhen -- Shantou/Chaozhou train:

Guangzhou East -- Shantou/Chaozhou trains:
N621/N624 (0826--1652/1620) 8h26min/7h54min
N628/N625 (1455--2140/2108) 6h45min6h13min

Guangzhou -- Chaozhou train:
N628/N625 (1442--2140/2108) 6h58min/6h26min

Buses are usually a better choice, as the rail routes are circuitous (ie trains take longer) and there're also more frequent bus departures. For buses it should be fine to buy tickets on-the-spot.

Shenzhen Donghu long-distance bus station (东湖汽车站（独树分站）) -- Shantou:
0930, 1000, 1325, 1330, 1345, 1500, 1540, 1545, 1550; 4h; 70 RMB

Shenzhen Futian long-distance bus station (福田汽车站) -- Shantou:
0800, 1030, 1130, 1330, 1430, 1630, 1735; 5h30min; 100 RMB
0900, 1500, 1930; 5h30min; 150 RMB

Shenzhen Nanshan long-distance bus station (南山汽车站) -- Shantou:
0905; 5h30min; 150 RMB

Shenzhen Donghu long-distance bus station (东湖汽车站) -- Chaozhou Heyuan long-distance bus station (河源汽车总站):
0700, 0800, 0830, 0900, 1000, 1040, 1200, 1230, 1300, 1400, 1500, 1600, 1700, 1800, 1900; 2h40min; 70 RMB

Shenzhen Donghu long-distance bus station (东湖汽车站) -- Chaozhou Zijin long-distance bus station (紫金汽车站):
0650, 0725, 0800, 0815, 0850, 0920, 1000, 1040, 1125, 1220, 1250, 1320, 1425, 1500, 1605, 1650, 1740; 3h; 55 RMB

There're more buses going from the same long-distance bus station to various other long-distance bus stations in Chaozhou, but I won't list all of them, too much work!

Guangzhou Tianhe and provincial long-distance bus stations (天河客运站 and 广东省汽车客运站) -- Shantou:
numerous departures 0710--2340; 5h; 180 RMB

Guangzhou Tianhe long-distance bus station (天河客运站) -- Chaozhou:
hourly departures 0700--2350; 170 RMB

I think I will take a bus. It is faster and has flexible departure time.
I think the reverse trip (from Shantou to Guangzhou) also the same, right?

Shantou and Chaozhou are both nice city, there are many special local products there, it is very delicious. And they are also many factories there, like ceramics in Chaozhou and Toys in Shantou. There is airport in Shantou, you can go there by plane also. June is a raining season in Shantou, and sometimes it may have typhoon too.

I don't think the bus fares would've changed much from what I replied earlier.

Departure from Guangzhou airport? You mean that you're arriving at and also leaving from Guangzhou airport, am I right?
If so, what are your flight arrival and departure times?
Guangzhou -- Chaozhou buses seem to take 5 hours journey time.
