My Boyfriend is chinese from Shenzhen, he wants me to come and teach there and we plan on getting married there as well. Would i be able to stay permantly in china after we are married? would i be considered canadian or chinese nationality after marriage?

If you get the Chinese nationality, of course you can saty in China permanently. But do remember it is prohibited to keep other nationality if you have got the Chinese one.
