There are many nationalities in Yunnan province, 25 or more I guess. Kunming is not a must cos it's a big city now. I recommend Lijiang, Jinghong, Dali and Shangri-La. You can enjoy the ethnical difference and cultures thoroughly.
Besides, Guizhou Province is also a good destination for tourists to enjoy culture of local nationalities.

Very nice topic. As I can see BBQQ got a lot of good ideas for pretty and useful topics!
I would like to say about Xinjiangnese:

-They are not one and only minority.
-They are not only Uygurs.
-A lot of Han-chinese are also Xinjiangnese already.
-Not every Xinjiangnese is a Muslim. There are even Christians as well.

Let me show you my people - the Tatarians (Tataer zu). Our forefathers are 3 basic peoples: Bulgars, Kipchaks and Mongols.
