One question - how do I greet my friend's parent in China?In Singapore, I would address my friend's parent as "Uncle or Aunty". When I meet them in China, is it ok to say "Uncle, ni hao"?

Yes, you may say 叔叔(Shu 1 Shu 1)好(Hao 3), 阿姨(A1 Yi 2)好(Hao 3)

I think the last time when I visited them in Fujian, I called them "伯父 & 伯母". Did I address them wrongly? What is the difference?

And SAYHITOANT, you may also say 伯父 & 伯母. Generally, when you address someone as 伯父or 伯母, it means that they are older than your parents.
