How Chinese is chinese cuisine outside China?

In my city we have many restaurants that serve 'Chinese food', it is obviously catered for western taste. I have got to know most of the owners of the good ones and they offer a different menu for people who want traditional taste. They do not advertise it but as all the chefs are from China they can cook it exactly how they would at home.
