I would like to know what time the Buses leave Guangzhou for Fujian and how long does the journey take
Can anyone help me

Which city of Fujian province are you asking? Do you mean Fuzhou, the capital city of Fujian?
There are direct bus from Guangzhou to Fuzhou at Guangzhou Tianhe Bus Station. The departing time are:
11.30, 14.20, 16.00, 16.40. 17.50, 18.20, 18.50, 19.00, 19.20, 19.50, 20.20, 20.50, 21.20
It's better for you to consult the station first.

Here is some information on buses from Guangzhou Panyu Bus Station to Xiamen

Type Departure Distance Ticket
Direct, Sleeper 11:20,19:00, 21:00 801 kms 310-369 RMB

Hope it helps!
