Chopsticks or Knives?

For last few days, I took a Yangtze Cruise tour. I found in the restaurant that most westerners used chopsticks when eating while most Chinese used knives. It was a little bit strange, right?

When talking with one American friends, he told me that he just did in Rome as Rome did. It's absolutely right. And can you tell me why didi most Chinese choose to use knives while traveling in their motherland?

Most of the western-style restaurants in China only offer knife and fork, so we have no other choices. And some western-style food, like beefsteak, is difficult to put into the mouth if we have no western dishware.

Maybe it is an interesting fangle for westerners to use chopsticks, they just want to learn a new skill, just like us, we Chinese, who also consider that using kinfe and fork is another skill that we feel as the novelty.
