Top Eight Chinese Cuisine, do you know?

Hi there,
Living or travelling around China, eating is a must. Chinese cuisine are generally divided into eight kinds. Can you list them?

Here I know one is Lu Cai (Shan Dong Cuisine). It is known for dishes based on a clear or milky broth. 'Confucius Family Dishes' (Kong Fu Jia Yan) may be the best known. Have you tasted? : D

I lived in Shandong for a while, so I've definitely eaten Lu Cai. It's good - although mostly too bland for my tastes. I'm all about the Sichuan Cai.

This time I ate Sichuan shrim noodles. Spicy and testy.
