| I had a meal when I was in China which was pork and egg. The egg was black and like jelly, the inside was similar to soft cheese. The outside of the egg was covered in what looked like spices maybe. I dont have any images of the egg but was wondering if anyone knows what I had and what it is called. |

| It is called century egg or thousand-year egg. In Chinese 皮蛋 (Pi Dan), 变蛋(Bian Dan), or 松花蛋(Song Hua Dan). |

| Yes I think so. I prefer Jian1 Jiao1 Bian4 Dan4, that is 尖椒变蛋 in Chinese. With green pepper shatters are covered on skin of the eggs, a little hot, a little sour and with the savory of eggs...... Yummy! |

| The eggs are soaked in a mixed hot soup of salt, red tea, cypress branches, sodium carbonate and calces. The duration usually last for 35-40 days. After the eggs are ready, they must be package with yellow mud soaked in the original soup. There are special factory making such eggs....... |

| wow, I didn't realise it takes so long. That must be why they are called century eggs/ thousand year eggs, they take almost that long to make. |
