finalising details

We leave in almost 3 weeks and now work is over am now finalising the smaller details. We are firstly going to Hong Kong for 10days, hopefully this will let us get over the jetlag and acclimatise a bit. Then on Aug 3rd we are travelling by deluxe soft sleeper up to Beijing. 1st questions are how and when is our luggage checked? I understand there is a weight limit and as we are coming to China for a year then ours may well be above the limit a little, is this strictly enforced on trains?
We will arrive in Beijing on saturday afternoon and then are meeting some people on Monday morning to go to Shijiazhuang (still can't pronounce this) and finalise employment positions etc. We will intend visiting Beijing again at some point in our year but i'm stuck on what to do for this day that will wet our appetite for the city.(So many choices) if we go to a show on either saturday or sunday evening will restaurants be open for us to try some Peking duck afterwards or will they have closed by this time?
The following week we will be going to a 'bootcamp' for 2 weeks to meet other teachers and to learn something of the Chinese language and culture before we settle in our accomodation and at our school for the new term.
Also is anyone aware if immunisation for Japanese encephalitus is the norm for this area for a UK citizen? It is on the list (along with every possible illness) but it seems to be a very minimal risk up here?

If you want late dinner, try Gui Jie (Ghost Street) near Yonghegong, or the Qianhai/Houhai area. They should be open till around 2200 or 2230.
There's no weight limit on baggage on trains.
I personally wouldn't bother with the Japanese encephalitus vaccine unless you're coming here to work on a pig farm.

Thanks Ellyse, we are careful about our luggage weight for the flight over but intended buying some things in Hong Kong and hadn't thought of the weight for trains!
We thought the same about the immunization, as does our nurse but still better to check with someone more local,
