I will be travelling to Guilin and staying a few days. My plan is to travel away from there to photograph the terraced rice fields which I will need to spend most of the day doing. Would I be better getting a taxi or hiring a car and driver for the day?

Hiring a vehicle (which might or might not be a taxi) and driver for the day would work.

For the charge, I think it all depends on the car's logo and how long your distance is.

i've never been to Guilin, so I cant give you exact places for such car hires there

but the general rule is that in every tourist place drivers offer themselves everywhere... that you would know when you land there. Try asking at your hotel for example. FYI for Xi'an, last time we paid 100 RMB for a day's drive to the east or west suburb.

maybe somebody else have precise information for Guilin?

Ask the hotel how much. Then use that asa base to go out and negotiate for yourself.
