Lanzhou Beef Noodle (兰州牛肉拉面)

Undoubtly, Lanzhou Beef Noodle is the most popular noodle in China since it can be seen in almost every city. The feature of the noodle is 一清二白三红四绿. 清 means that the soup is clear. 白 means the radish in the noodle is white. 红 means the hot pepper and 绿 means the shallot.

Wuhan Re Gan Mian(武汉热干面)

The cooking style of Re Gan Mian is quite special. First of all, the noodle should be boiled. Then the noodle should be mixed by sesame oil and cooled. Then put the cold noodle into hot water for several seconds and quickly put it into the bowl. Put some seasoning and enjoy it!

(Xi'an Hu La Tang Soup)西安糊辣汤
Actually, Hu La Tang is very popular in Shaanxi and Henan Province. But the cooking style is different. Xi'an's local muslims can do it best. The actual name in Xian of this hot and spicy food is 肉丸糊辣汤.

Beijing Dou Zhi (北京豆汁)

Actually it's a kind of bean milk but it is made by mung bean. Not everyone like its flavor, but local Beijingers can never left it.

Shanghai Sticky Rice Dumpling (上海糯米团)

Made the sticky rice a piece of battercake, put some preserved pickles and a twisted cruller. Roll the battercake into a dumpling. This is the traditinal Shanghai breakfast. Sadly, I don't like it at all.

The name of this food is 酸辣, which means sour and hot.If u can't bear the taste, never try!

I have tried Ningbo Tang Yuan, it was too sweet for me.
I will try the Changsha Rice Noodles when I'm there in October.
