How to make fried egg with spring bamboo shoots? It is very easy. Just follow the steps.

Materials: spring bamboo shoots (250 grams), three eggs and a shallot.

Seasonings: 6 tablespoons vegetable oil, 1/2 tablespoon starch, 1 tablespoon salt, 1/2 tablespoon chicken powder, 1 tablespoon soy and 1/3 tablespoon sesame oil.

Step 1 Wash spring bamboo shoots and quick-boil it in boiling water for 2 minutes and then take it out of the boiler. Mix 1/2 tablespoon starch with 3 tablespoons water.

Step 2 Cut spring bamboo shoots into pieces and chop the shallot. Beat three eggs in a bowl, add 1/5 tablespoon salt and then mix them together.

Step 3 Add five tablespoons vegetable oil into the boiler. When the oil turned heated, pour beaten eggs in and fry it. And then cut it into pieces (not to small).

Step 4 Heat one tablespoon vegetable oil and quick-fry shallot pieces. And then add spring bamboo shoots in and stir-fry it for one minute, then add 1/3 tablespoon salt, 1/2 tablespoon chicken powder, 1 tablespoon soy, 1/3 tablespoon sesame oil and 3 tablespoons clean water. Finally, stir them in the boiler.

Step 5 Add fried eggs into the boiler, pour starch water in and scatter some chopped fistular onions.
