| Materials: ham (400 grams), 2 eggplants, 2 green pepper and 3 pieces ginger. Seasonings: vegetable oil ( 5 tablespoons), starch (1/2 tablespoon), Chicken powder (1/2 tablespoon), oyster oil (2 tablespoons), soyabean sauce(1 tablespoon), sesame (1/3 tablespoon). Step 1 Cut the eggplant in bars and put them in cold clear water. Take out the seeds of the green pepper and cut them into pieces, and mince the ginger. |

| Step 2 Slice ham into pieces and then cut them in bars. Mix 1/2 tablespoon starch and 3 tablespoons water together. |

| Step 3 Add 5 tablespoons vegetable oil into the boiler. When it is heating, quick-fry minced ginger and green pepper and then add ham in and stir-fry ham with slow fire. |
