Fried eggplant with ham

Materials: ham (400 grams), 2 eggplants, 2 green pepper and 3 pieces ginger.

Seasonings: vegetable oil ( 5 tablespoons), starch (1/2 tablespoon), Chicken powder (1/2 tablespoon), oyster oil (2 tablespoons), soyabean sauce(1 tablespoon), sesame (1/3 tablespoon).

Step 1 Cut the eggplant in bars and put them in cold clear water. Take out the seeds of the green pepper and cut them into pieces, and mince the ginger.

Step 2 Slice ham into pieces and then cut them in bars. Mix 1/2 tablespoon starch and 3 tablespoons water together.

Step 3 Add 5 tablespoons vegetable oil into the boiler. When it is heating, quick-fry minced ginger and green pepper and then add ham in and stir-fry ham with slow fire.

Step 4 Add eggplant bars in and Quick-fry for three minutes, and then add 1/2 tablespoon chicken powder, 2 tablespoons oyster oil, 1 tablespoon soybean sauce and 1/2 cup of water (about 125 ml) in. Then stir-fry for 5 minutes.

Step 5 Add starchy water and 1/3 tablespoon sesame and then stir-fry them.
