| Don't be confused by the name of this dish. Actually, it is easy to make. Materials: dry noodles (made from sweet potato starch) (200 grams), minced pork (125 grams), rice wine (6 grams), some broad-bean sauce, monosodium glutamate (2 grams), pickled pepper (8 grams), chopped green onion (3 grams), fermented glutinous wine (13 grams) and chopped ginger (3 grams). Steps: 1. Stir-fry minced pork in the pan and then add broad-bean sauce, pickled pepper, rice wine, monosodium glutamate and soy sauce in. When smelling the flavour, then add fermented glutinous wine. 2. Stir-fry dry noodles (made from sweet potato starch) with lard, mix them with minced pork and then fry them with slow fire for a while. Then add chopped green onion and ginger in and stir-fry for a second. |

| I have had this several times in China and its one of the few Chinese meals I can cook myself. Very tasty food. |

| Why is it called 'Ants climbing a tree'?? I haven't been able to buy pork mince lately, except for some which looks to be 90% fat...is that because or the price rice and no-one wants mince now, or maybe because I have moved from the north to the south, or again by location, do I have to buy my pork and request the butcher to mince it for me? A note on Msg: many western people will not eat any food with it in as tests have suggested it is carcinogenic (causes cancer). However, the tests only indicted this if it is consumed in very high quantities.... so persoanlly I keep using it. |

| Well, the authentic 'ants climbing a tree' should have minced black fungus in. Those small pieces of black fungus look like ants and the dry noodles are 'branches of the tree'. It is said that this dish has something to do with Dou E, a character in The Injustice to Dou E written by Guan Hanqing. To get more information about Dou E, you could have access to http://en.wikipedia.org/ Dou Tianzhang (father of Dou E) sold Dou E to his debtee as a child bride in order to raise some money for taking part in the imperial examination. Unluckily, Dou E's husband died after they got married. Thus, she burdened the responsibility to take of her mother in law. Their life was hard because her mother in law suffered a serious illness. To take good care of her mother in law, Dou E not only brought her to see doctors but also tried her best to make delicious dishes to help her recover soon. However, they were too poor and could not afford to buy pork. Without other ways, she begged the butcher and had little pork on tick. Actually she did not know what dish she could make with this little pork. Finally, she used some left dry bean noodles, black fungus and pork to cook 'ants climbing a tree'. |
