Fried lotus slices with minced pork and dace

Materials: minced pork (300 grams), ground dace (300 grams), lotus root (820 grams).

Seasonings: edible oil ( 1 bowl), cooking wine (2 tablespoons), starch (1 tablespoon), salt (1 tablespoon) and chicken powder (1/2 tablespoon).

Step 1 wash and peel the skin of lotus roots and then slice them into pieces (each about 0.2 cm).

Step 2 Put minced pork in the bowl and add 1/2 tablespoon cooking wine, 1 tablespoon starch, 1/3 tablespoon salt and 1/2 tablespoon chicken powder. Then mix them together and stir them well and salt for 15 mintues.

Step 3 Put ground dace in a bowl and add 1 tablespoon cooking wine, 1/3 tablespoon salt. Then stir them with a chopstick well and salt for 15 minutes.

Step 4 Lay minced pork on one side of the lotus slice and ground dace on the other side one by one.

Step 5 Heat one bowl of edible oil in the pan. Add several slices in and fry them with quick fire for 30 seconds and then fry with slow fire for one minute. When two sides of the lotus root slices turn golden, take them out. Remember not to put many slices in at a time. Fry them at several times.

Iceberg,

This recipe looks really good. I just have one question, what is Dace? I looked it up and its a type of fish but Is it the same?

Do you mean to use the dried dace that comes in oval shaped cans?

And it looks very similar to the English Dace which likes clear fastish moving streams.

No, paul. It must be fresh fish and you have to make fish mince by yourself (using a machine or just mince the dace with kitchen knife. Do you ever make stuffing or filling for dumplings? You can make dace mince in the same way.
