Fried eggs with tender yellowish leek and tomato juice

Materials: four eggs, 50 grams yellowish leek and some garlic.

Seasonings: 11 tablespoons edible oil, 1/5 tablespoon salt, 3 talbespoons white sugar and tomato juice( it will be added in the last step and not add too much).

Step 1 Wash and clean the yellowish leek and cut yellowish leek into segments (each about 5 cms). Chop the garlic into pieces.

Step 2 Beat four eggs in a bowl and add 1/2 tablespoon edible oil and 1/5 tablespoon salt. Then mix them well.

Step 3 Heat three tablespoons edible oil in the pan and quick-fry chopped garlic. Then add yellowish leek in and stir-fry for 30 seconds and take it out of the pan.

Step 4 Heat 6 tablespoons edible oil in the pan and add beated eggs in. Then stir it clockwise and wait it turns semi-coagulated.

Step 5 When it turned semi-coagulated, add yellowish leek in and stir-fry them together( don't stir-fry too long. otherwise, the eggs and yellowish leek are not tender).

Step 6 heat a tablespoon edible oil in the pan with slow fire and add some tomato juice and 3 tablespoons white sugar in to make special tomato juice. Then pour the juice on the fried eggs and yellowish leek.

Thats a pretty common recipe, except that green garlic leeks are used.

I actually have a friend who grows these yellow leeks commercially here in the states. To Produce this type of leek, for every one pound of yellow leeks that is produced, 3 pounds of green leeks have to be purged which is why yellow leeks cost 4x the price of green leeks.

In western terms, I'd call it a leek omelette.
