Sweet and sour pig hand

Materials: one pig hand, five ginger slices and two shallot.
Seasonings: edible oil ( three tablespoons), starch (1/2 tablespoon), cooking wine (1 tablespoon), rice wine (2 tablespoons), white vinegar ( 3 tablespoons), soybean sauce (2 tablespoons), salt (1/2 tablespoon) and white sugar (2 tablespoons).

Step 1 Clean the pig hand and cut it into pices. Cut the shallot into pieces. Add one tablespoon cooking wine and shallot pieces in the boiling water. Then quick-boil the pig hand in the boiling water.

No.2 Boil the pig hand in the water (six bowls) and then stew with gentle heat for 35 minutes. Mix 1/2 tablespoon starch with 3 tablespoons water well.

Step 3 Heat 3 tablespoons edible oil, quick-fry ginger slices and shallot pieces together and then stir-fry pig hand for 3 minutes.

Step 4 Add 2 tablespoons rice wine, 3 tablespoons white vinegar and 2 tablespoons soybean sauce and stir-fry pig hand for a second. Then add 2 bowls of soup (you boil pig hand in the second step).

Step 5 Add 1/2 tablespoon salt and 2 tablespoons white sugar and stew with gentle heat for 15 minutes.

Step 6 When the 'pig hand soup' turns thick, add starchy water in.

Thanks Icerberg, I'm sure Jing will prepare some lovely food for me, my friend Nina is going take us for a meal when I'm in Yueyang.
I will probably cook this myself, provided I can get all the ingrediants.
