Mouthwatering chicken

Materials: a spring chicken, ginger (3 slices), stalk Scallion (2) and Chinese prickly ash (3 tablespoons) and dry red chili (5).

Marinade: Minced ginger (1 tablespoon), minced garlic (2 tablespoons), minced stalk scallion (1 tablespoon), soybean sauce (3 tablespoons) ,sesame paste (1 talbespoon), red chili oil (3 tablespoons), white sugar (1/3 tablespoon), white vinegar (2 tablspoon), chicken powder (1/3 tablespoon), sesame oil (1/2 tablespoon), salt (1/3 tablespoon), cooked sesame (1 tablespoon) and cold boiled water (3 tablespoons).

Seasonings: edible oil (2 tablespoons), cooking wine (2 tablespoons) and salt (1 tablespoon).

Step 1 Cut off the head and feet of the spring chicken and wash it cleanly. Slice ginger, chop stalk scallion and mince dry red chili.

Step 2 First boil some water (just soak the spring chicken, that is ok), then put the spring chicken, chopped stalk scallion, ginger slices, 2 tablespoons Chinese prickly ash, 2 tablespoons cooking wine and 1 tablespoon salt and mix them well. Finally boil with gentle heat for 20 minutes. If you can use a chopstick to stab in the chicken, that is ok.

Step 3 Soak the spring chicken in cold water and then take it out and put it in the hot pot. Finally, add chicken soup and wait for 30 minutes.

Step 4 Pre-heat 2 tablespoons edible oil, add chopped red chili and 1 tablespoon Chinese prickly ash and stir-fry for a while. Then put the fried mixture in a bowl and add 1 tablespoon minced ginger, 2 tablespoons minced garlic and 1 tablespoon chopped stalk scallion and mix them well.

Step 5 Add 3 tablespoons soybean sauce, 1 tablespoon sesame paste, 3 tablespoons red chili oil, 1/3 tablespoon white sugar, 2 tablespoons white vinegar, 1/3 tablespoon chicken powder, 1/2 tablespoon sesame oil, 1/3 tablespoon salt, 1 tablespoon cooked sesame and 3 tablespoons cold boiled water in the bowl and mix them very well.

Step 6 Chop cooked spring chicken into pieces and put them on a plate. Then scatter marinade and minced stalk scallion.
