| Materials: a spring chicken, ginger (3 slices), stalk Scallion (2) and Chinese prickly ash (3 tablespoons) and dry red chili (5). Marinade: Minced ginger (1 tablespoon), minced garlic (2 tablespoons), minced stalk scallion (1 tablespoon), soybean sauce (3 tablespoons) ,sesame paste (1 talbespoon), red chili oil (3 tablespoons), white sugar (1/3 tablespoon), white vinegar (2 tablspoon), chicken powder (1/3 tablespoon), sesame oil (1/2 tablespoon), salt (1/3 tablespoon), cooked sesame (1 tablespoon) and cold boiled water (3 tablespoons). Seasonings: edible oil (2 tablespoons), cooking wine (2 tablespoons) and salt (1 tablespoon). Step 1 Cut off the head and feet of the spring chicken and wash it cleanly. Slice ginger, chop stalk scallion and mince dry red chili. |

| Step 2 First boil some water (just soak the spring chicken, that is ok), then put the spring chicken, chopped stalk scallion, ginger slices, 2 tablespoons Chinese prickly ash, 2 tablespoons cooking wine and 1 tablespoon salt and mix them well. Finally boil with gentle heat for 20 minutes. If you can use a chopstick to stab in the chicken, that is ok. |
