Sauted Squid Rolls

Preparations:

-Discard the membrane, brain and internal organs of the squids, rinse, remove the inner shell-like skin, score crisscross cuts on the insides, slice, add clear soup, stew till the slices roll up and are flavored, remove.

-Season oil with scallion and ginger, drop in the squid rolls, stir-fry, add seasonings, thicken slighly.

Chicken Kidney with Crab Meat

Materials:
350g crabs
150 chicken kidney
10g scallion
5g ginger
75g chicken soup
1g pepper

Preparations:

-Wash the crabs and steam till done, take out the crab meat, ovaries and fat. Boil the chicken kidney till done, remove the skin.
-Season oil with scallion and ginger, drop in crab meat, ovaries and fat and chicken kidney , slightly stir-fry, add chicken soup and seasonings, stir-fry till the flavor penetrates, thicken, sprinkle with sesame oil.

Golden and Silver Duck Slices

Materials:
100g duck meat
100g roasted boneless duck meat

Preparations:
-Cut the raw duck meat into slices, steep in a paste of egg white, dry cornstarch, soda bicarbonate and sugar for 20 minutes.

-Slice the cooked duck. Pour oil into a hot wok, bring to 4-fold hot, drop in the raw duck slices, stir-fry till done, add the cooked duck, stir-fry, remove.

-Season oil with scallion and ginger, drop in the cabbage hearts, cooking wine, soup-stock, MSG, pepper and white sugar, bring to the boil, drop in the duck skices, thicken, sprinkle with sesame oil.

Sour and Hot Soup with Eel and Chicken

Materials:
100g cooked eel shreds
100g cooked chicken breast shreds
100g fragrant mushroom shreds

Preparations:

-Season oil with scallion and ginger, drop in the cooked eel shreds, cooked chicken breast shreds and mushroom shreds, stir-fry till flavored.

-Add clear chicken soup, bring to the boil, skim, add rice vinegar, MSG, salt and white pepper.

Materials: 500g fresh gluten25 shrimp roechopped garlic bolt

Preparations
1. Scald the glutten, place in a casserole, add soup stock, wine, salt and MSG, bring to the boil, simmer till flavored.

2. Slightly stir the shrimp roe in hot, cooked chicken fat, add wine and sugar then add to the casserole, simmer till soup is almost dry, sprinkle on garlic bolt.

dish above named Gluten with Shrimp Roe


Three Shreds with Razor Clam
Materials:
400g fresh razor chams
25g strips of ham
50g soaked dried mushroom strips
10g young ginger pieces
100g green pepper shreds
one celery

Preparations

Boil the razor clam meat and save the stock.
Scald the green pepper strips and together with the dried mushroom strips drop in soup stock till flavored.
Mix the razor clam, mushroom strips and green pepper strips, add condiments, stir evenly the transfer to a plate, scald the short lengths of celery and circle them around the plate.
Sprinkle with pepper, and sesame oil.

In Shanghai, there are many restaurants. If you want to taste high-quality Shanghai cuisine, you can go to Juxiange Hotel, located at No.118 Gaoyi Road (Gaoyi Lu). Whampoa Club is also highly-recommended.
