Qingdao dumplings and various food

I had some beautiful dumplings in Qingdao, but what surprised me most was the mix that they used to dip them in. It was a combination of Vinegar, Garlic, chili paste, and soy sauce. IT WAS DELICIOUS. - can someone tell me what kind of chili paste and soy sauce they used? I"m going to try and make some dumplings soon =] hopefully they came out half as good as the ones in Qingdao ...

BTW
the pigs feet were delicious if anyone has a recipe for chinese pig's feet I would really appreciate it.

As far as I know, the local people in Qingdao don' t like spicy food, so they seldom add the chilli paste to the mix. When I visited Qingdao last April, the food I tasted is very bland. Is the sauce made of tomato. BTW, the seafood in Qingdao is magnificent.
