Braised meat balls in brown sauce

Have you ever heard of 红烧狮子头 (Braised meat balls in brown sauce)? It is a famous Chinese dish. If you don't want to spend much money to taste it in the restaurant, please learn to cook it by yourself.

Materials: pork (70 percent lean meat).

Other ingredients: Chicken, ginger, spring scallion and egg.

Seasonings: Salt, chicken essence, pepper powder, sesame oil, sugar, soybean sauce and starch.

Steps:

Step 1 Separate lean from fat, chop lean into pieces and cut fat into small dices as big as pomegranate seeds. Then mix fat and lean together and chop them together.

Step 2 Add some water in the mixture of fat and lean, a beaten egg and some starch (not too much). Then mix them together and add salt, chicken essence and pepper powder. Finally add minced ginger, spring scallion and sesame oil and mix them well.

Step 3 Pre-heat edible oil, knead meat into balls and fry them in the oil. When its surface turns golden, take them out.

Step 4 Quick-fry ginger slices and chicken, and then add cooking wine, soybean sauce, sugar, chicken essence and water. After boiling, add spring scallion sections in.

Step 5 Add meat balls in chicken soup. Heat the mixture with big fire. After boiling, stew with little fire for two hours. Then take meat balls out and place them on the plate.

I Know, there is a course of dish called 'Four-Joy Meatballs'. In Chinese, it means "四喜丸子". In think, the cooking way of it is as the same as that of 红烧狮子头. In a plate, there are four meatballs. Hope this dish to make you joyful.Hah, hah!
