| Materials: Silver carp head (860 grams), beancurd (a box), ginger (5 slices), 2 caraway, 2 spring scallion and some garlic. Seasonings: edible oil (5 tablespoons), rice wine (3 tablespoons), salt (1/3 tablespoon) and chicken powder (1/2 tablespoon). Step 1 Cut beancurd into blocks, cut silver carp head into two pieces, peel ginger and slice it, cut spring scallion and caraway into sections, get rid of the skin of the garlic and then pat the garlic with a knife. |

| Step 2 Pre-heat 5 tablespoons edible oil, quick-fry ginger slices, spring scallion sections and patted garlic. Then add silver carp head in and fry for a while and add 2 tablespoons rice wine. When the surface turns golden, take them out. |

| Dave, fish head looks disgusting but the soup is good. Last night, my friends and I had a dinner together and we ordered fish and beancurd soup. It tasted good. Do you know 剁椒鱼头(fish head with chopped chili)? It is a famous dish. |

| Not heard of it. I had fish and veg soup in China which looked good and tasted good until it was stired and a big head popped up. That really put me off. |
