Hot and Dry Noodles, a traditional snack in Wu Han

Material: minced pork (200 grams), thin hand-pulled noodles (250 grams), dried turnip (50 grams), minced spring scallion (1 tablespoon), cooked white sesame (1 tablespoon).

Sauce materials: 1 tablespoon sesame oil, 3 tablespoons sesame paste, 1/3 tablespoon chicken powder, 1 tablespoon soybean sauce, 1 tablespoon aromatic vinegar, 1 tablespoon thick broad bean sauce and 2 tablespoons red chili oil

Seasonings: 4 tablespoons edible oil and 1 tablespoon salt.

Step 1 Pre-heat 2 tablespoons edible oil, stir-fry minced pork and put dried turnip in. Then stir-fry them together till minced pork turns white. Finally, add one bowl of water and boil them.

Step 3 Cook thin hand-pulled noodles. Remember to put 1 tablespoon salt before cooking noodles.

Step 4 Cool down hot noodles in cool water.

Step 5 pre-heat 2 tablespoons edible oil, put cooked noodles in and stir them well.

Step 6 Put noodles in the plate, pour sauce on noodles, and scatter minced spring scallion and 1 tablespoon white sesame.

GUEST10143 I'm not sure where you learned this from but as a person who is from Wuhan, that's NOT hot dry noodles. Perhaps you're not Chinese? Hot dry noodles is actually a very simple dish and is not that complicated to make as you mentioned. Basically it's made out of noodles that was hand made and dipped in oil. The appearance should be white to a light yellowish colour. Then the noodles are cooked in boiling water, and served in a bowl. From there, you add the main sauces: Sesame sauce, Soy Sauce, and a little bit of chili oil. Those are the main ingredients that make the basic hot dry noodles taste. Other ingredients that is optional includes black pepper, Sesame OIL, (not sauce) green onion, garlic, and pickled radish. I would suggest you trying the method that I have mentioned to see and taste what the real hot dry noodles is like.

Looks good to me

Jeff, maybe you should understand, there are 100s of variations on the same dish. In fact you could probably walk through a street in Wuhan and try this dish in 10 restaurants and the chefs will cook 10 different ways.
Maybe you can give us a full breakdown of your cooking and supply pictures too, I am sure you are a great chef at age 13.
