Dan dan mian is perhaps my favourite..........and a good local street food here in CQ

I'm not sure about this one but I ate some noodles in Wuhan which was quite spicy with beans and it may have been this one??????????? or something similar.

Are there are more varieties than those on the list??????????

Jabarootoo, I guess that what you ate in Wuhan was different from 炸酱面. The famous noodles in Wuhan is 热干面. Here is the photo. If you want to know how to make, just have a look at Iceberg's recipe (http://community.travelchinaguide.com/forum2.asp?i=44498) in Chinese Food.

炸酱面 in Beijing is authentic. If you have a chance, you can enjoy it in Beijing. Here is the photo.

Actually, 哨子面 (Shao 4 Zi 3 Mian 4), 油泼面 (You 2 Po 1 Mian 4) and 裤带面 (Ku 4 Dai 4 Mian 4) in Shaanxi and 拉条子拌面 (La 1 Tiao 2 Zi Ban 4 Mian 4) in Xinjiang also taste good.

You are a wealth of information. Ri Gan mian was what we ate in Wuhand and it was delicious.

We just happened to see someone eating it and asked for the same. A little risky but it turned out to be a good call.
