I am confused with what exactly you are planning to do? Are you entering Mainland China (Not Hong Kong)? If not, then you don't need a visa at all. If you are planning to enter China, then you need an L visa for every entry.

GUEST32170 after we have spent 2 weeks in China with a single entry visa, we are then going to Hong Kong for a short visit, before travelling back to London. Our flight is going via Shanghai where i believe it will pick up more passengers for London, as we will not be spending any time in Shanghai possibly not even leaving the aircraft, i am told that i will not need a visa for landing in Shanghai is this correct.

You will not need a visa in Shanghai unl;ess they are not good connecting flights. If they are not, they can stamp your passport with a 24 hour temporary visa which allows you out into the city. (But it might take them a while to locate someone who will do this and then find the rubber stamp (my experience)

Correct - you will not need a visa to transit at Shanghai as you will not clear immigration. Are you flying China Eastern or Virgin?

Ok, if you are travelling with China Eastern airlines, you need to check you will be landing and departing from the same airport! You certainly won't be using the same plane to fly from HK to SH, as you will be to fly from SH to LHR. So the very least will be a plane change, but I have heard of people (particularly in Shanghai) arriving to discover they need to change not only planes, but also airports! In which case you will need to clear immigration again. If it is the same airport, check there is no terminal change.
