ATMs that take international cards are quite plentiful in major cities -- you didn't mention where you're going in China.
Credit cards are only accepted at upscale hotels and restaurants.

No ATMs on the boat, of course!
8-day cruise sounds like a bad nightmare to me. I had more than enough with my 3-day cruise.
