Steamed Wuchang fish with black curded beans!

Materials: 630 grams Wuchang fish, 1/2 tablespoon minced ginger, 1/2 tablespoon minced garlic, 1/2 tablespoon minced spring onion and 1 tablespoon minced caraway.

Black bean sauce: 3 tablespoons black curded beans, 1 tablespoon soy sauce, 1 tablespoon oyster oil, 1/5 tablespoon salt, 1/3 tablespoon chicken powder, 1/4 tablespoon white sugar, 1 tablespoon cooking wine and 1/3 cup of clear chicken soup.

Seasonings: 4 tablespoons edible oil.

Step 1 Wash Wuchang fish, make several cuts on its two sides and stick some salt to Wuchang fish.

Step 2 Chop black beans into pieces. Mince ginger, garlic, spring onion and caraway into pieces too.

Step 3 Heat 1 tablespoon edible oil, fry minced garlic and ginger, and black beans until fragrant and then put the mixture in a bowl.

Step 4 Add other materials to make black bean sauce.

Step 5 Pour black bean sauce over Wuchang fish and then cover it with cling film.

Step 6 Steam Wuchang fish for 15 minutes with fierce heat. Then get rid of cling film.

Step 7 Heat 3 tablespoons edible oil, fry minced spring onion and caraway until fragrant and then pour it over the Wuchang fish.

GUESTHOMING ... Compliment to the chef, the presentation is marvellous.
60 yrs ago I lived in Wuchang, hubei, for 6 months, had few times the fish on the pic fresh fom the Kwaitz lake
at time, local people called it Bian (1),new comers called it Bian (3).
the delicate meat is the most delicious food ever.
