However note that you go through immigration at Beijing train station, so you won't be allowed off the train enroute. On your way back from Hong Kong, please be warned that you might have to take flights instead of overland transport due to the entire population going home for winter holidays and also Chinese New Year. You might consider skipping Fuzhou, I don't think it's particularly interesting.
