| When I am cooking spinach, I find that it is a little bitter. No matter how I cook it (fry or make a cold dish with bean noodle) and how many times I try, the bitterness can't be gotten rid of. Do you have this problem? How do you cook spinach? |

| Cook spinach by dropping it into a hot skillet with just the water that still clings to the leaves from washing. Fold the cooked spinach at the bottom of the pan over the uncooked leaves at the top. Keep adding leaves as the spinach cooks down. The spinach is cooked when the leaves are wilted completely but still bright green, which takes about 2 minutes. You could try some grated nutmeg, or a spoonful of low fat soft cheese with a dusting of nutmeg. Stir-fry spinach with garlic and ginger. Top with tofu and peanut sauce. Sauté spinach with garlic, oil and some red pepper flakes it'll take about 2 minutes. Add a little lemon juice. |

| Spinach doesn't have a great deal of flavour, lemon juice just adds a little "zing" and helps hide the bitterness |

| Well, I can't imgaine how spinach tastes after you add lemon juice as seasoning. A little sour and sweet? |
