| Materials: 400 grams tofu, 250 grams shrimps, 1 celery, 2 slices of ginger, 1 tablespoon minced spring onion and some garlic. Marinade: 1/5 tablespoon salt, 1/2 tablespoon cooking wine, 1/4 tablespoon white pepper powder, 1/3 tablespoon chicken powder. Sauce: 1 tablespoon seafood soy sauce, 1/2 tablespoon starch, 1/4 tablespoon white sugar, 1/5 tablespoon white pepper powder, 1/3 tablespoon sesame oil, 1/4 tablespoon salt and 1/4 cup of water. Seasonings: 2 tablespooons edible oil and 1 tablespoon broad bean paste. Step 1 Get rid of the heads and shells of the shrimps, wash them and then add 1/5 tablespoon salt, 1/2 tablespoon cooking wine, 1/4 tablespoon white pepper powder, 1/3 tablespoon chicken powder in a basin to marinade the shrimps for 15 minutes. |

| Step 2 Cut tofu into small pieces, quick-boil in boiling water for 1 minute (remember to add some salt in the water), take out and drain tofu pieces. Get rid of leaves of the celery and cut it into pieces. |
