Dave, sour and spicy Chinese cabbage is a Sichuan style dish. It is not as hot as you imagine. I think that Hunan dishes are hotter than Sichuan dishes. I remembered that my friends and I went to a Hunan restaurant near our college, I asked the waiter to introduce some dishes that were not too hot to me. He did introduce some to me but they were still too hot. I can't get used to Hunan dishes.

It is good to eat cabbage in winter. I oder cabbage every time I eat chafing dish with my friend.
