Cooking pig's head is not an easy job. My dad and mom spent a whole day cooking it. Now, few people cook pig's head. On one hand, it is hard to cook. On the other hand, pig's head doesn't taste good (to be honest) and you can hardly find them in the market. My mom said to me that the reason why we ate pig's head was that the pork was too expensive and people in the countryside couldn't afford the pork. So they bought pig's head. Pig's head.

GUESTITS	Only the ears, nose, tongue... and of course the insides - liver, heart, kidney, stomach.... great stuff when cooked the Chinese way!!

Thus, I had a lot of pig's tail. Howver, I ddin't find I became smarter. Seriously, it tastes similar like pig's ear, very crisp.
