When I was in primary school, I remembered that my parents often bought pig's head for the Spring Festival. Cooking pig's head is not an easy job. My dad and mom spent a whole day cooking it. Now, few people cook pig's head. On one hand, it is hard to cook. On the other hand, pig's head doesn't taste good (to be honest) and you can hardly find them in the market. My mom said to me that the reason why we ate pig's head was that the pork was too expensive and people in the countryside couldn't afford the pork. So they bought pig's head.

Pig's head.

This is called "Ba Zhu Lian (Scratching Pig's Head).

Just look at that pig's tongue in the first picture. I have no appetite at all. However, "Ba Zhu Lian" in the second picture looks great. Don't know if it tastes good.

Did you eat pig's tail before? When I was a little boy, my mom told me that eating pig's tail could make you smarter. Thus, I had a lot of pig's tail. Howver, I ddin't find I became smarter. Seriously, it tastes similar like pig's ear, very crisp.
