A recipe for Home Style Fish!

Here is a recipe for Home Style Fish.

Ingredients:

1 freshwater manderin fish about 750 grams(1.65lb)
25 grams (0.9oz) sliced meat
25 grams (0.9oz) sliced bamboo shoots
25 grams (0.9oz) mushroom slices
5 grams (1 tsp) sugar
2 grams (1/3 tsp) salt
30 grams (1.6 tbsp) soy sauce
3 hot chillies
25 grams (1.5 tsp) mixture of cornstarch and water
5 grams (0.18oz) sectioned scallions
2 grams (1/2 tsp) MSG
500 grams (2 cups) cooking oil (only 50 grams or 4 tbsp to be actually consumed)
5 grams (1 tsp) cooking wine
200 grams (4/5 cup) water

Directions:
1. Cut the fish, remove gills and scales. Make one cut where the meat is thick. Rub the fish with soy sauce.

2. Heat oil over a hot fire and turn down to medium fire when the oil is 180-200 degree centigrade(355-390 Fahrenheit) hot. Deep-fry both sides of the fish until it is 70 percent done.

3. Keep 20 grams (1.5 tbsp) of oil in the work. Put in the scallions and ginger until they give out an aroma. Put in the chilli, meat slices, bamboo shoots and mushrooms. Stir0fry for 1 minute and add the fish, cooking wine, soy sauce, salt, sugar, MSG and water. When mixture starts to boil, turn the fire to low and cook for 15 minutes. Turn the fire hot again to thicken the sauce. Sprinkle sesame oil and it is ready to serve.

Features: Golden in color with savory and rich sauce.
Taste: The fish is tender and the sauce has a slightly sweet taste.
