I am going to visit Canton fair first time. When I have to pay for the goods - at the moment of dealilng or through cargo company-to prevent any frauds.

Suppliers in Canton Fair quote on FOB basis, so that you can pay against B/L copy. It's not the same as you buy from wholesale market where you have to pay before you take the goods away.
