Chinese Visa application in india

Hi. My girlfriend and I are English and are flying to India then onto China in January 2010. We are staying in India too long for a single entry visa for China, applied for in England, to be valid by the time we arrive in China. we would rather not apply for a double entry visa if we can avoid it to save money. Please could somebody advise me as to whether we can apply at the Chinese embassy in Mumbai for a Chinese Visa even though we are English. Also do we need any extra documentation? I read somewhere that they require original bank statements?

Normally,foreigners can apply L visa easily through the China Embassy.
