Traveling from HK to Beijing by train

Hi all, I just found this forum and it is a wealth of resources! Forgive me if this question is answered somewhere else, but I couldn't find it.

My question is this: my friend and I who live in Beijing are going to HK soon to get our visas renewed and plan on taking our time traveling back to Beijing as neither of us have really traveled China before and work is a little lax at the moment. We will be flying into HK at the end of February and want to take somewhere around 2 weeks getting back to Beijing by train(sorry I know that's vague). We want to do it on a moderate budget and see as much as we can on our way back. It helps a lot that my friend can read and speak Mandarin fluently.

Where would you go? Is our plan unrealistic? Is it possible to buy train tickets now at the last minute like this? We were planning on taking a train for a few hours towards Beijing, getting off at a stop that looks interesting and is somewhat populated and walking around for the day, then catching another train the next day. Is that possible?
