| Alfex, it is preserved pig. Naxi ethtic minority in Lijiang has a unique way to preserve the pig. They remove the pig's innards and take away all bones and lean meat. Then they put Sichuan pepper, garlic and ginger in and then sew the skin together and salt the pig. Then the "hollow" pig is flattened and dried in the sun. It is said that such preserved pig can be preserved for several years. Did you taste preserved pig in Lijiang? It is very delicious. |
