What foods should I make sure to try?

Hi everybody,

I'm traveling to Kunming, Dali, Chengdu, and Emei Shan in a couple weeks. I already know about hotpot. What other foods should I be sure not to miss? I like spice! Both veggie and meat suggestions are welcome :) I consider food to be one of the highlights of any trip.

Plenty of good Sichuan food in Chengdu, other than hotpot! Would you like some names of dishes in Chinese, perhaps?
Also for Kunming I would recommend the mushroom hotpot as it's a local specialty.

Having the names written in Chinese would be great, thanks! I love mushrooms, so I'll be sure to check out that dish in Kunming. I leave in less than 2 weeks!
