Hostels vs. Hotels how does it affect your experience?

I've only stayed in a Hostel once in Boston, the experience was alright except for being very drunk and being able to hear people talking in the next room.

How would the experience in China be different staying in a Hostel vs. a hotel. I doubt I would be in the room for long during the day so having a place to sleep at night is all I would really need. How are hostels in China compared to other places? Looking at http://www.hostelworld.com/ it's cool to see that some hostels go for about $7US/night in Chongqing for example. Obviously if everyone had their way they'd opt for the Hilton's and Sheraton's if money were no object. :)
